Quinoa is not one of the five grains and, therefore, one does not make a Mezonot blessing over it. Rather, one recites either the blessings of either Ha'adama or Shehakol, depending on how it is used. If it is ground up and used as flour it is Shehakol. If it is eaten whole the correct Bracha is Ha'adama.
