Dear Rabbi: I want to ask about conversion out of, not into, Judaism. Do we ever recognize it? Thank you for your help.

According to Maimonides it is impossible to relinquish one's status as a Jew regardless of how one leads one's life. That means that all those who chose to opt out of being Jewish are not actually changing their status at all.
